So who is still going strong, having now completed 14 days?!!  Well done to you if you have managed to stay on the better road to good health and wellness. If you have had a bad couple days or so, don’t give up! We still have a long way and it’s normal to fall down. But keep the end goal in mind and let me help you stay focused! You can conquer!!
So just to keep you motivated, Chris (my husband) has lost 2.7kg! He hasn’t been down this much in many years; so he is super amped to continue his SPRINT. I think one of the most important issues is, having a GOAL. It is the underlying motivating factor. We won’t just do it for the sake of it. So make sure you’ve set yourself a realistic goal to achieve.
Remember 80% is what you eat and 20% exercise. Don’t neglect the exercise portion as once again, with Chris, he loses when he exercises.

It’s Monday night and I am going to cook up a tasty Curry Mince and serve it with Zucchini(baby marrow) fries done in the oven with a  green salad.

CURRY MINCE (serves 6)
2 Tbsp Coconut Oil
1kg ground beef mince (not lean)
2 onions, finely chopped up
1 tsp curry powder (medium)
2 tsp fresh garlic (crushed)
1 Red pepper (finely chopped up)
1/2 tin coconut cream
Himalayan Salt & Pepper to taste
Water if needed
Heat up Coconut oil.
Add spices and garlic and stir
Add onion & pepper and mix in for a couple minutes
Add mince and brown well
Add salt and pepper to liking
Add coconut cream and simmer for 25 minutes
If you need to add more liquid, add water otherwise it will be good for serving on Zucchini fries.
