If you’ve been sticking to your new way of eating, most of you should have shed some weight by now, but the key is to just keep going so don’t give up! I wanted to provide some delicious inspiration for you today for dinner and dessert options! First up, some freshly made Norwegian salmon fish cakes with only 5 ingredients. Recipe is from one of my favorites Jamie Oliver – and it only took me 20 minutes to whip up!

 

Recipe: 350gm fresh Norwegian salmon, fresh chunk of ginger, 2 stalks of lemon grass and a bunch of coriander.
Take half the salmon and cut up fillet into cubes, then take lemon grass smash with side of knife and chop up the ginger and coriander until it looks like a paste. Add in other half of salmon fillet and chop up roughly. Then mix all together, flatten down and divide into 4. Take each piece and mould into a patty in your hand and carefully put into a heated non-stick pan. Have all 4 patties in the frying pan. Leave for a few minutes and then carefully turnover, repeat on other side then put a little home made tomato chilli chutney on top of patties. Turn over for 30 seconds and then turn back and garnish with a little coriander and serve with a scrumptious salad of your choice!

For dessert – a little Carb Clever nutty muesli with a dash of fresh cream and a few raspberries and blackberries – perfect!  Tell me how you are doing on your own sprint and if there is anything you are unsure of. I would love to assist!
